What you'll need
- Chemex & Filter Paper
- Some Good Coffee
- Grinder (or pre-ground coffee)
- Timer
- Kettle
- Electric Scales
Prepare
1. Turn your kettle on - if possible, heat to 200°F/93°C. If not, boil and let it rest for about 30 seconds.
2. Unfold a filter paper and place in your Chemex with the triple layer facing the spout. Rinse thoroughly with hot water to remove any papery taste and preheat your Chemex. Discard the rinse water.
3. Add your ground coffee and gently shake to level the bed.
4. Set your Chemex on your scales and tare them.
Pour
1. Bloom: Start your timer and pour 60g of water, making sure you cover all the grounds. Let it bloom for 45 seconds to release trapped gases.
2. Pour One: Slowly pour in a circular motion until you reach 250g total. Give it a gentle swirl and leave to drip through.
3. Pour Two: When about 1cm of liquid remains, continue pouring (gentle and steady) until you reach 500g total. Swirl again to even out the coffee bed. This should take 4-5 minutes - if its too fast grind finer, too slow coarser.
Enjoy!
Let the water fully drain through, remove the filter, and swirl your coffee before serving. Enjoy your clean, balanced cup!
